Colour

Soft Yellow/Lemon.

Nose

Opens on barley water and lemon juice with a sweet notes of lemon meringues. Fragrant floral blossoms intermingle beautifully with the citrus flavours exciting the taste buds. Also, we find little notes of ester sweet pineapple.

Palate

Malted barley emerges. Crisp and sweet, almost like toasted rye bread, buttery popcorn and the fresh oak bourbon flavours merge into the mix strong and mellow adding structure and weight to the overall experience.

Finish

Organic barley produces a more malty taste, the texture is more viscous and fresh green fruity notes are more pronounced.. The finish is like glycerine and it caresses the palate like swansdown. Oh the purity!

Conclusion

Precision and definition.. Light, fresh, clean, smooth and creamy. A single malt this young simply should not be as smooth but this is handcrafted, fully certified organic single malt.

Note

2003 was a particularly fine harvest of chalice barley for William Rose at Culblair farm. Supreme quality barley combined with a slow trickle-distillation to do it justice, and new oak has resulted in the "creamiest" spirit we’ve ever seen. A limited edition release of 15,000 numbered bottles. Our very first organic release and something of a milestone.
