The Milk & Honey Distillery is Israel’s first whisky distillery, dedicated to genuine artisanal manufacture and committed to maintaining the highest standards. The ingredients, equipment, barrels and production process are all carefully managed to ensure a true top-shelf, world-class product.We make an honest product. We will not compromise or take shortcuts in the creation of our single malt whisky; we only use high quality barley, real whisky stills and expertly selected barrels. Whether it’s our Single Malt Whisky or other premium distillations, we take pride in what we do and in what we make. Our goal is to make Israel’s best Single Malt whisky.Israel’s modern relationship with quality alcoholic beverages got a new lease of life in the early 1990s. It was then that the first Israeli artisanal wineries began a journey to what has blossomed into a success story. Israeli boutique wineries now produce wines lauded the world over. The first decade of the new millennium saw the first wave of Israeli craft beer. What was initially treated as passing trend has established itself as a high quality and creative local craft brewing industry. We are excited to be pioneers of quality distillation in Israel. The Milk & Honey Distillery is the result of a group of whisky-loving entrepreneurs’ dream of an Israeli Single Malt coming true. Some of us home-brewed as a hobby, some of us have worked in the spirit business and all of us love and drink whisky. The company was established in 2012. Construction of the distillery began in 2014 and actual distillation started in 2015. It is going to take a few more years until our first batch of Israeli Single Malt Whisky leaves the barrel but good things take time. We are here for the long run. Our manufacturing abilities can cater for more than just Israel; expect to meet us in North America, Europe and other markets with a demand for top-quality and kosher spirits.We invested in the best equipment needed for a fully-operational whisky distillery; we have a custom-built whisky pot still and a vintage still that was made according to the Scottish coppersmith tradition. We mill, mash and ferment our mash in-house. Our barrel selection includes carefully-selected ex-Bourbon casks and a collection of new oak barrels and ex-wine barrels – kosher, of course. We hired Dr. James Swan, perhaps the best independent master distiller in the world, as our Master Distiller and consultant. Our research and development was made under Dr. Swan’s close guidance; his experience helps us grow. Israel’s hot climate allows for quick maturation. We are situated in Tel Aviv, where the average temperature is between 13c in January and 26c in July, and the humidity percentage is anything between 50-90%. We estimate that we reach maturation 2-2.5 times quicker compared to Scotch; for example, our 3 years-old single malt whisky can be equated to a 6-8 years old Scottish Single Malt. Moreover, with Israel’s 5 geothermic regions, we have the opportunity to experiment with maturation in other areas, such as the mountains, the desert, and of course – The Dead Sea, the lowest place on earth. Settling in Tel Aviv was a natural choice. Tel Aviv is the culinary and mixology hub of Israel and is also the epic center of entrepreneurship and technology in the country; how can we be elsewhere? Most of us live in the city and enjoy cycling down the promenade by the sea on our way to work, or stop for a quick drink at the end of the day. But other than the personal benefits that our location provides, we are proud and excited to be a part of the city.
