- Nose
Barbecue-charred kippers. A single espresso shot with three sugar cubes stirred in, served with gingerbread men. The smoke is dark and dense, like damp peat burning in a grate.
- Palate
Thick and creamy, with tangy spice and heavy peat smoke. The flavours of charred ribs in barbecue sauce marry perfectly with rich cherry compote, ground sea salt and black peppercorns.
- Finish
Aniseed and old-fashioned liquorice sweets linger.
