- Nose
Rich and buttery, with sour cream leading in to sweet-shop flavours of toffee, gummi fruit, milk-bottle sweets and apple candy. Sweet bacon-tinged smoke sneaks in behind the sweeter notes.
- Palate
The sweetness from the nose continues, but smoke blasts in across the palate. The bacon notes are complemented by coal and wood smoke, and coastal notes of shellfish and brine sit behind. A drop of water lifts the fruity flavours, revealing sweet and sour apples.
- Finish
Apple skin and leafy herbs fade to sweet toffee and sooty smoke.

Sometimes a single cask of whisky appears without much known about it – this is one of them. When we were offered a punchy 63.4% ABV whisky matured in wood of unknown provenance, we were sceptical, but on tasting it we couldn’t say no. After extensive taste testing we think it might have been a rum cask, but we can’t be sure.
