Review by St. Kilian

Colour

Bernstein with Rose Accent

Nose

White peach, ripe raspberries and creamy strawberry biscuit play together with a fine malt flavor and a hint of fresh mint

Palate

In sweet toffee and fruity berry dessert a spicy Intermezzo follows with hints of cereals, cocoa and aromatic oak

Finish

A long finish with a fine oak, caramel and fruity notes

Conclusion

Fresh, fruity, full of character: "Two" is the second single malt whiskey from our Signature Edition. Fully matured in former Amarone red wine barrels from Italy - for a complex balance of intense fruit and subtle spice.

Note

Our "Two" is a fresh fruity whiskey full of temperament. Its unique flavor is created by the full maturation in Amarone barrels. What this type of wine makes them so special? After the harvest the grapes dry for several months, losing up to half of their weight and develop a high sugar and flavor concentration. This Amarone is one of the most sought-after wines of Italy - and gives this single malt whiskey its creamy intense fruit flavors.

This limited edition of 6,600 bottling shows how creative experimentation and experience at St. Kilian go hand in hand - from the malt to cask selection. For the harmonious taste not only provide three different sizes of Amarone red wine barrels, but also a special "mashbill" (mash recipe). Our "Two", we distilled from four different barley malts: pilsner malt, Munich malt, and Caramünch Melanoidin.

Every single malt whiskey from our Signature Edition carries the individual signature of selected barrels. The maturation of the "Two" took place in three different barrel sizes: Nearly two-thirds of the whiskey were stored in 325-liter wine barrels, well another third in 225-liter barrels and a small amount comes from only 50 liters ex-Amarone Casks , The reason? The complex interplay of fruity and light notes from the large barrels and spicy intense notes from the small barrels. In them the whiskey matures much faster - they take care of the fine-spicy top note.
