Our finest sherry casks are left almost entirely to their own devices for 30 years. Almost, but not quite.
Twice, perhaps three times in three decades, our malt master will taste this ongoing alchemy of cask and spirit. His aim: to hand-select only the best sherry oak casks.
Has each decade added deep colour, intense flavour and limitless complexity to the precious contents? A small wooden bung is all that stands in our malt masters way; in the cool of the warehouse, he eases it from the cask.
He holds a dram to the light, swirls it beneath his nose, takes a sip then records his judgement. Only the very best can become Glengoyne 30 Year Old typically just 13 casks a year will bear the name.
